Rack of Lamb with Creamy Potato Gratins
- 1 pack Iceland Luxury Rack of Lamb (defrosted)
- 650g pack Frozen Mixed Peppers
- 2 Onions
- 50g Olive Oil
- 1 pack Iceland 4 Cheese & Potato Creamy Gratins
- Salt and Pepper
Follow the on-pack cooking instructions for the Luxury Rack of Lamb.
Whilst the lamb is roasting, place a heavy bottomed pan over a low heat and add the olive oil.
Slice the onions and add to the pan.
Add the mixed peppers and continue to sweat down and stir to prevent burning.
Whilst the lamb is roasting and the onion and pepper mix is sweating down, follow the on-pack cooking instructions for the Creamy Potato Gratins.
Once the lamb is cooked, rest it before carving and serve with the sweet pepper and onion mix and the potato gratins.
