Sausage, Black Pudding & Three Bean Casserole
- 400g chopped tomatoes
- 230g black pudding (broken into small pieces)
- 800g pork sausages
- 400g Iceland Pea & Four Bean Medley in a Mint Butter
- 2 red onions (cut into wedges)
- 30g tomato puree
- 10g garlic
- 20g olive oil
- Salt and pepper to taste
- 2 slices of bread (crumbed)
- 20g butter
Cook sausages to pack instructions.
In a non-stick frying pan, fry the breadcrumbs in butter over a moderate to high heat and then set to one side.
In a saucepan add the onions, oil and garlic and cook over a moderate heat until soft.
Add the tomatoes, puree and seasoning to the pan. Cook for ten minutes.
Add bean mix to the pan and cook for a further 5 minutes.
Place the cooked sausages into a casserole dish and pour over the bean sauce mixture. Top with the breadcrumbs and black pudding and cook in a preheated oven at 180 for 20-25 minutes.
Cook the sweet potato mash to pack instructions and serve with the casserole.
