Cajun BBQ Cauliflower Steaks
- 6 x slices of Iceland Sliced Tiger Bloomer Bread
- 1 x Farmer's Market Large Cauliflower
- 2 x ripe Farmer’s Market Avocados
- 1 x Lime
- 5g of frozen Chilli
- 5g of frozen Coriander
- 1 x pack of Iceland Bistro Salad
- 1 x pot of Iceland Houmous
- 20g Cajun seasoning
- 20g Veg Oil
- Salt and Pepper to taste
Start by removing the outer leaves from the cauliflower and slicing into 4 steaks. Pour the oil into a large tray and sprinkle with the Cajun seasoning. Place the cauliflower steaks onto the oil and seasoning, and coat well on both sides. Leave to one side until ready to BBQ.
Peel the avocados and remove the stones. Place the avocados into a mixing bowl along with the chilli, coriander, lime juice, and seasoning. Crush the ingredients with either your hands or a fork and set to one side until you’re ready to assemble the sandwich.
Once your BBQ is ready, place your cauliflower steaks over the heat and grill for 5 minutes on each side or until cooked through. During the first 5 minutes of grilling the cauliflower, toast your bloomer slices.
Place the first toasted slice on to a plate and spread with a spoonful of houmous. Next, place the grilled cauliflower on one slice and then top with another slice of bread. You can then place the crushed avocado before finishing the sandwich off with the last slice of toast. Pop in two skewers, and slice in half. Serve with extra houmous and bistro salad if desired.
