- 1 100g pack of Vine Tomatoes
- 1 Red Onion
- 50ml Olive Oil
- 10g frozen Chilli
- 5g frozen Parsley
- 5 frozen Coriander
Place the tomatoes in a pan over a moderate to high heat and leave for 10 minutes, turning occasionally until the skin has blackened.
Remove tomatoes from the heat and set aside to cool.
Roughly chop the tomatoes.
Finally, dice the red onion and rinse under cold water.
In a mixing bowl add all the ingredients and season to taste.
Serving suggestion: Top a slice of Bruschetta with the salsa and enjoy!
