Start your day right with something from our selection of healthy breakfast recipes.
- 2 large eggs
- 100g frozen spinach
- 1 tomato
- 50g mature cheddar cheese (grated)
- Little oil for lining ramekins
Lightly oil 2 Ramekins. Defrost spinach and squeeze out any excess water, divide between the 2 ramekins.
Chop tomato roughly and divide between the ramekins.
Crack an egg in each dish and top each one with 25g cheese.
Place the ramekins in a baking dish and pour enough lukewarm water into the dish to come halfway up the sides of the ramekins.
Bake at 180c for 15 minutes or until your egg is set to your liking.
