Pork Loin Steaks with Sweet Potato Mash
- 2 defrosted pork loin steaks 400g
- 300g sweet potato mash
- 25g olive oil
- Sea salt and black pepper to taste
Pre-heat the grill to a medium to high heat.
Drizzle the loin steaks with olive oil and season. Place the loin steaks onto a wire rack and grill for 5-6 minutes on each side Reduce heat if necessary.
In the meantime, place the sweet potato in a pan, season to taste and heat over a moderate heat occasionally stirring to prevent burning.
Once the sweet potato is hot and the steaks are cooked through, serve and drizzle with the remaining olive oil.
