Lunch - Recipes
Prepare a deliciously light lunch with something from our selection of healthy lunch recipes.
Chicken & Rice Broth
- 200g pulled chicken breast
- 1 Oxo chicken stock pot or chicken stock
- 500 ml water
- 100g frozen spinach (defrosted and excess water removed)
- 1 bag frozen white rice (6 bags per pack)
- 1 onion diced small
Cook onion in a pan with a little oil until soft.
Add water and oxo stock pot.
Bring to a simmer and add rice, chicken and spinach.
Heat until piping hot and season with a little salt and pepper to taste.
Serve broth in 2 soup bowls.
