Prepare a deliciously light lunch with something from our selection of healthy lunch recipes.
Feta and Crushed Pea Tostada
- 4 soft tortilla wraps
- 1 200g block feta
- 200g frozen peas cooked
- 1 teaspoon Schwartz Cajun spice mix
- 1 teaspoon frozen chilli
- 1 teaspoon frozen coriander
- Little oil
In a bowl crush the peas roughly with a fork then crumble in the feta and mix.
Fold in the chilli, coriander and Cajun spice.
Place 2 wraps side by side and divide the pea and feta mix between them.
Spread out an even layer across the wrap, then top with the remaining 2 wraps.
Heat a large pan to medium-hot, and add a dash of oil.
Place the wrap sandwich in the pan and cook until golden.
Carefully turn over and repeat on the other side.
Repeat this stage for the other wrap sandwich.
