Prepare a deliciously light lunch with something from our selection of healthy lunch recipes.
Grilled Atlantic Salmon, Green Bean and Tomato Salad
- 2 Atlantic salmon fillets
- 200g Fine green beans
- 1 red onion peeled and sliced
- 2 tomatoes
- 1 lemon
- 50ml extra virgin olive oil
- Salt / pepper
Defrost salmon the night before in the fridge.
Place the salmon fillets on a tray and place under a pre- heated hot grill, cook salmon to your liking.
In a pan of boiling water, plunge the beans and cook for 2 minutes until hot.
Drain and divide between 2 serving plates.
Chop tomatoes in irregular shapes and divide between each plate.
Add the sliced onions to the plates.
Top with salmon and squeeze the juice of 1 lemon over the top.
Drizzle with olive oil to finish.
