Prepare a deliciously light lunch with something from our selection of healthy lunch recipes.
Tenderstem® Broccoli Tortilla with Houmous and Feta
- 1 packet of frozen Tenderstem® broccoli
- 50g of crumbled feta
- 4 tbsp of houmous
- 1 tbsp of veg oil
- Seasoning to taste
- Drizzle of olive oil to serve
Place the broccoli onto an oven tray drizzle with the veg oil and season. Place into a preheated 180c oven for 7 to 8 minutes
Whilst the broccoli is in the oven toast the tortillas in a dry frying pan over a high heat for around 30 seconds each side and place on the serving plates
Spoon and spread the houmous over the toasted tortillas and top with the roasted broccoli
Add the crumbled feta and finish with a drizzle of olive oil.
