Cooking Instructions

  • Cooking Instructions General Capture the Flavour. Defrosting before cooking brings out all the best flavours in this dish. Our Pitmaster's Guide to Cooking Always ensure product is piping hot before serving.
  • Hob From Frozen Remove the bag from box & foil tray. Place in a pan of boiling water. Bring the water back to the boil and simmer for 30 minutes. Remove the bag from pan. Empty contents of the bag into the foil tray provided. Place the tray into pre heated oven at 180ºc for 20 minutes. Remove from the oven and serve on a large plate or board. Share and enjoy.
  • Oven cook From Defrost 1. Remove from freezer and defrost in fridge for 24 hours. Ensure the product is thoroughly defrosted before cooking. 2. Remove all packaging. 3. Empty the wings and the sauce into the foil tray provided. 4. Oven cook (Always pre-heat your oven) Fan 180ºC Gas mark 6 25 mins For conventional ovens adjust time and temperatures to suit. 5. Remove from the oven and serve on a large plate or board. Share and enjoy.

    These meaty duck wings are smoked over hickory black tea and slow cooked in their own juices with a Hoisin sauce inspired by the original Peking recipe. Smoking the duck with black tea and hickory balances the spices (such as cinnamon and star anise) within the rub. The slow sous vide then infuses the smoke flavour.
