Mediterranean Style Pan-Fried Mackerel Fillets
- 2 Iceland Mackerel fillets - defrosted and seasoned with salt & pepper
- 250g Iceland sweet potato chunks
- 2tbsp runny honey
- 1 tbsp olive oil
- 250g Iceland grilled red and yellow peppers
- Salt & pepper
Pre heat the oven to 200c, 400f, gas mark 6. Place the potatoes in a bowl add the honey, olive oil and season. Mix well so the potatoes are all coated with the glaze.
Tip the potatoes onto a baking tray and bake in the oven for 10 minutes.
Then take the baking tray out of the oven add the mixed peppers to the tray in a single layer and cook for a further 10 minutes.
Meanwhile heat 1 tbsp olive oil in a frying pan on a high heat for a minute, add the mackerel skin side down and cook for 1-2 minutes without turning, then turn and cook the other side for a further 1-2 minutes until the fish flesh is opaque white.
Divide the potato mixture between 2 plates and place the mackerel fillet on top.
