Pan Fried Atlantic Cod Fillets & "Quick Guacamole"
- 2 Iceland Atlantic cod fillets - defrosted and seasoned with salt & pepper.
- 3 Iceland avocados - defrosted and chopped
- 1/2 tsp chilli flakes
- 2 wholemeal Warburton thins - toasted
- Juice of 1/2 lemon
Heat 1 tbsp olive oil in a frying pan over a medium heat add the cod fillets and fry for 4-5 mins on 1 side - don't turn the fish before thence it will cause the fish to break up. Then fry on the other side for a further 3-4 mins.
Mix together the chopped avocado, chilli flakes, lemon juice and salt & pepper. Pile on top of the toasted Warburton thins.
Place the cooked cod fillet on top of the avocado mixture and serve.
