Prepare a deliciously light lunch with something from our selection of healthy lunch recipes.
Chargrilled Chicken with Baby Tomatoes and Courgette
- 2 Iceland Butchers market chicken breasts - defrosted, flattened with a rolling pin
- 200g Iceland grilled courgette slices
- 2 small bunches baby tomatoes on the vine
- 1tsp smoked paprika
- 2tbsp orange juice
- 2 individual Bags of Iceland multi green rice bags - cooked to pack instructions
Season the chicken breasts. Cook in a griddle pan brushed with a little oil over a high/medium heat for 4-5 mins on each side.
Meanwhile place half the veg and tomatoes between 2 squares of foil, sprinkle over the paprika and orange juice and scrunch into a parcel. Bake on a baking tray in a preheated oven at 200c, 400F, gas mark 6 for 5-10 minutes.
Serve the chicken with the parcel of veg and multi green rice.
