Lunch - Recipes
Prepare a deliciously light lunch with something from our selection of healthy lunch recipes.
Pea soup with crumbled chorizo
- 1 large diced onion
- 2 tbsp veg oil
- 200g peeled and diced potato
- 1 litre veg stock
- 1 bag frozen peas, defrosted
- Seasoning to taste
- 1 stick of chorizo peeled and roughly chopped into small chunks
Sweat the onions in the veg oil for 10 minutes until soft.
Add the diced potato and cover with the stock. Bring to the boil and simmer for 10 to 15 minutes until the potato is tender.
Add the peas, then season well and blend until smooth using a hand blender.
Crisp the chorizo in a non-stick pan over a medium heat.
Pour the soup into bowls and top with the crispy chorizo.
