Lunch - Recipes
Prepare a deliciously light lunch with something from our selection of healthy lunch recipes.
Smashed avocado and tortilla chips
- 4 halves frozen avocado (defrosted)
- The juice of 1 lime
- 1 tsp of frozen chilli flakes
- 1 tbsp of frozen coriander
- 50g Lancashire cheese
- Seasoning to taste
Place the avocados into a bowl along with all the other ingredients - except the Lancashire cheese
Crush/smash the avocado mix until well combined.
Pour the tortilla chips into a bowl and spoon over the smashed avocado. Top this with the crumbled Lancashire cheese
